Johnny Appleseed Toast

This is another Kids in the Kitchen recipe and of course another apple themed recipe for apple month. The recipe is from 'Cooking with Kids Can Be Easy' and it has always been a winner around here.

What you need:

1 apple

Honey to drizzle

2 slices of cinnamon raisin bread

Butter to spread

Cinnamon to sprinkle

What you do:

Slice your apples thin and spread butter on your bread. You can use any kind of apple you like.

Place your apples on your buttered bread like so. Drizzle with honey and sprinkle with cinnamon.

Place your bread slices on a baking sheet and toast them under your broiler for about 30 secs. Keep an eye on them!

Don't they look yummy? Believe me they taste yummy too!

Applesauce Parfaits

YAY for Apple Month! This is one of my favorite apple recipes. It is so quick and easy. It is a great afternoon snack or breakfast. My son loves it for breakfast with his hardboiled eggs. I hope you and your kids like it too.
By the way, this is a great recipe to get your kids in the kitchen and helping.

*Graham Crackers

What you do:

Crush your graham crackers until they are fine. I love using my rolling pin for this but a glass would work. I use 4 crackers for one parfait. My son loves this part. Pour part of the cracker crumbs in a glass.

Add a few tablespoons of applesauce to the glass.

Sprinkle with cinnamon and drizzle with honey, looks good so far. Now keep layering until your glass is full. Top with the rest of your crumbs, honey and cinnamon.

Here is the finished product...

So fun to look at, fun to make and fun to eat! Now get your kids in the kitchen and start cooking!

September is Apple Month

September is Apple Month here on Kids Eating Healthy and it is one of my favorite months! I love summer, but my second favorite season is fall. I love the crisp mornings and cooler evenings. The season also gives me an abudance of one of my favorite fruits, apples.
Photobucket
I love cooking with them and eating them. This month I will be featuring apple recipes I love and sharing a few facts about this tasty little fruit. Every post I make will have a Linky up so you can link up to your favorite apple recipes on your own blog. Please share what you have with me, I would love to see how you enjoy using apples in your own kitchen.

Buttery Cinnamon Biscuits

If you're like me you are always looking for a tasty, easy-to-make, treat for your kiddos to enjoy in the morning. I try every morning to be sure that my son has something warm in his tummy before he heads off to school. In a fantasy world that would mean that I have time to cook every morning, but in reality I don't. Therefore I tend to rely on things I can make during the weekend that are easy warm ups for school mornings.

Today I have been busy in the kitchen making apple jam in my breadmaker and Buttery Cinnamon Biscuits. (from Flavors of Fall by Gooseberry Patch)
These biscuits are sure to be a hit this week on the cold mornings to come. I know I love em', as I've already sampled one.

You will need:

2 c. all-purpose flour
4 t. baking powder
2t. sugar
1/2t. salt
1/3c. butter, sliced
2/3 c. apple cider (I used Simply Apple Apple Juice)
1/4t. cinnamon
1/8t. nutmeg

What you do:

Mix flour, baking powder, sugar and salt; cut in butter to form coarse crumbs. Stir in cider/apple juice; mix well until soft dough forms.
***here's where I changed it up. I kneaded my dough in my large mixing bowl instead of putting it on a floured surface. I hate the mess of kneading it on the counter.
Spray muffin tins with non-stick spray. Pull off about a golf ball size amount of dough, pat it in your hands until it is the size of the bottom of a muffin tin.

Place biscuits in muffin tin and sprinkle with the cinnamon and sugar.

Bake for 12-15mins on 450 degrees.

I topped mine with honey today but I'm sure the apple jam will taste great on them, or even just butter.

Enjoy!
