Loaded Baked Potato Soup

When cooler weather starts coming I start thinking about soups and stews. One of my favorite soups is Loaded Baked Potato Soup. It is very tasty and sticks to your ribs. I think I started out making this with a recipe, not sure where I got it from. But I have modified it and have basically made it my own after many years.

Loaded Baked Potato Soup

What you need:

9 baking potatoes (bake them ahead of time until they are done, peel them and cut them in chunks)

Cook 1/2 a package of bacon (I use turkey bacon)

Shred 1 cup of cheddar cheese

2 cups of milk

1 cup of chicken broth

Garlic salt and pepper to taste

What you do:

Cook your bacon in a large pot. Then add the rest of your ingredients to the large pot with the bacon. Cook for about 20-30mins on medium heat. You may want to mash a few of the potatoes with your spoon while they are cooking in the soup. Add a little more broth if needed until the soup is to your desired thickness.
Serve topped with a spoon of sour cream.

*I make some killer cheddar biscuits to go along with this dinner.

  1. Oh Yummm!!!!! I love Potato Soup, but don't make it to often since DH isn't supposed to eat to many carbs later in the day. Maybe next time he takes a business trip I will make it.
