One Pot Chicken and Rice

I have been so bad about taking pics of my dishes lately, boo on me. Actually last night I had a really a good excuse for not taking a pic of my chicken in a pot, I cooked it at my Grandma's house and did not have my camera with me. Next time I make it I promise I will post a picture of it because it was really pretty!

Ok on with the recipe now...

One Pot Chicken and Rice

You will need:

1 whole chicken

1 can of italian diced tomatoes (do not drain)

1 cup of quick cooking brown rice

1 cup of water

4 tblsp of olive oil

Italian seasoning

Thyme

Sage

Garlic Salt

A big pot you can cook your chicken in the oven in, I used a cast iron dutch oven.

*Preheat your oven to 350 degrees

Spray the pot with non stick spray and put whole chicken in, breast side up.

Coat your chicken with olive oil and then coat it with the Italian Seasoning, Garlic Salt, Thyme and Sage. I did not measure these I just made sure my chicken was fully coated. Put the lid on the pot and bake it for an hour on 350. After 1 hour turn the oven up to 450 and continue cooking it for another hour or until the juices run clear.

Measure out your cup of rice and pour it around the chicken in the pot, then pour your can of diced tomatoes in with the rice around the chicken and add your cup of water. Mix it all together in the pot around the chicken, put the lid back on the pot and return it to the oven. Cook for another 15-20mins or until the rice is done.

I served it with a pea salad but I am sure any green veggie or salad would work. This dinner was so easy, yummy and clean up was simply wonderful!
