Southern Potato Salad

This is such a simple potato salad recipe. My Grandma has been making this recipe for years and it is the best. I have tried many others but this is the potato salad I always come back to. Honestly I could put my head in this bowl and not come up for air until the bowl is empty.

What you need:

1 bag of potatoes (I like Idaho potatoes)

1-1/2 onion (I used red because that is what I had but you can use yellow or whatever you have on hand)chop it finely or in larger pieces, whatever you prefer.

1-1/2 cup of pickles chopped (dill pickles)

1/2 cup of mayo (add more if you like, but start with 1/2 cup and add more later)

1/4 cup of mustard (like the mayo start with this and add more later)

1/4 cup pickle juice (dill pickle juice)

6 eggs

salt and paprika to taste


What you do:

Peel and chop your potatoes. Place them in a large pot of water, put your eggs in too. Add a few generous pinches of kosher salt to your water. *Potatoes really soak in salt* Cover and boil for about 15-20 mins or until your potatoes are fork tender.

Remove the pot from the stove and drain the eggs and potatoes. Place them in a large bowl. Peel and chop your hardboiled eggs. Add your mayo, mustard, pickles, pickle juice and onions.

Mix it all together well, add more mayo, mustard and salt if you would like. Be sure to taste it before adding more of anything. By the way I like to add a little more pickle juice to mine, I love the taste of pickles.

Now sprinkle the top of your potato salad with paprika and enjoy!

Easter Egg Recipe Ideas

Oh, what to do with all of those dyed Easter eggs? Eat them of course! One of Kiddo's all-time-favortie breakfast foods is a hardboiled egg; so plenty of ours get eaten that way. There are some other great recipe ideas out there too to help you use up those colorful eggs. Here are some of my favorites.

Salads for Lunch

I love to pack Kiddo a salad in his lunch. Its a nice change for the warm spring days. The key to Kiddo is that he does NOT like lettuce. Therefore, his salads are lettuceless (is that a word? LOL) salads. What his salads have in them:

hard boiled egg, cheese, tuna or diced up chicken, tomatoes, and cucumbers.

Sometimes I make it a tuna or chicken salad by adding mayo and sometimes I just add a touch of ranch dressing. Of course if I do that he always wants some black olives in the salad too and maybe some pasta.

Deviled Eggs

6 hard boiled eggs cut lengthwise, remove yolks and put them in a bowl.
Add 1/4 cup of mayo, 1/2 tsp of mustard, salt/pepper to taste, and 2 tsp of dill relish. Mix well and refill back into the egg whites with a spoon. Top with a sprinkling of paprika.

Egg Salad Sandwiches

This recipe came from Simplyrecipes.com and it is wonderful. Not your typical egg salad sandwich recipe. Keep in mind this recipe is only for one sandwich.

1 hard-boiled* egg (large), peeled and chopped
1-2 Tbsp mayonnaise (to taste)
2 Tbsp chopped celery
1 Tbsp chopped green onion
Curry powder (to taste)
Salt and pepper (to taste)
1 leaf of lettuce
2 slices dark rye bread, toasted

Mix the first 6 ingredients together well then put the mixture on top of one slice of bread, add lettuce (a tomato slice too if you would like) and top with the other slice of bread. Tasty!

Cinnamon Raisin Biscuits for Christmas Morning

I have made these several times and they are always a hit. I think they are the perfect recipe for Christmas Morning because they are so easy to make. I found the recipe on www.tammysrecipes.com, I found several recipes while searching and this one is by far the best.

Homemade Cinnamon Raisin Biscuits

What you need:

1 cup whole wheat flour
1 cup white flour
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3/4 cup butter
1/2-1 cup milk* (you may need less than this, just enough to make a biscuit consistency)
1 cup raisins

What you do:

Mix together your dry ingredients and cut your butter into them. I like to dice my butter up then use my hands to mix it in the dry ingredients. I just work it in until the butter bits are the size of peas.

Now add your milk and mix, then stir in your raisins.

Put your dough on a flour service and pat it with your hands out till its about 1/2 inch thick. Use a floured biscuit cutter (or a glass in my case) and cut out your biscuits. Place them in a sprayed baking pan (be sure they are touching)

and bake them at 450 degrees for 10-13 mins.

Mix up this yummy glaze and drizzle it over cooled biscuits.

*Glaze

3 Tablespoons softened butter
1 teaspoon ground cinnamon
1 3/4 cups powdered sugar
2-3 Tablespoons milk

Mix together 3 Tablespoons softened butter and 1 teaspoon ground cinnamon. Add 1 3/4 cups powdered sugar and stir. Add about 2-3 Tablespoons of milk and beat with electric mixer on HI for a minute or until light and fluffy.

These are so yummy, so light and so fluffy.

Blueberry Pound Cake For The 4th

This recipe is soooooooooooooooo....good! Actually it is to die for. I was just googling around one day searching for a good pound cake recipe when I happened upon it, I found it on allrecipes.com. I had blueberries in my fridge from my bushes and needed to use them, this was the perfect solution.

What you Need:

2 tablespoons butter
1/4 cup white sugar
2 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
2 cups fresh blueberries
1/4 cup all-purpose flour

What you do:

Preheat your oven to 325 degrees

Mix together your 2 3/4 cup of flour, salt, and baking powder, then set aside.

Rinse blueberries, put in a bowl and coat them with about 1/4 of a cup of sugar (I let mine sit for about 30mins like this) then dredge them with 1/4 cup of flour.

In another bowl cream together 1 cup of butter and 2 cups of sugar, beat your eggs in one at a time and add vanilla. Beat your flour mixture gently until mixed. Add your blueberries, I used my hands to take them out of their bowl and discared the extra flour from them.

Gently fold blueberries into batter.

Kiddo was in the kitchen helping out with this recipe.

Grease your bundt pan with 2 tablespoons of butter, or spray it with non stick spray (this is what I did) Then coat the pan with sugar.

Pour your batter in your pan and bake for 1 hour and 10mins (this is what the recipe asks for, mine only baked for an hour and it was done)

Let the cake cool in the pan for about 10 mins before taking it out.
Slice and enjoy!

This was a very good recipe! Most pound cakes need a glaze but this one DID NOT. The sugar really made the outside crispy and the inside was nice and moist.

Can Halloween Treats Be Healthy?

Sure they can!

One of my favorite magazines/websites has some great healthy halloween treat ideas. www.kraftfoodandfamily.com

Here are a few of them:

Spooky Eyeball Beans
Prep Time: 5 min Total Time: 30 min

Makes: 8 servings

What You Need1 jar (18 oz.) oven-baked beans 1 can (16 oz.) kidney beans, drained, rinsed 1 jar (10 oz.) small whole onions, drained 3/4 cup KRAFT Honey Barbecue Sauce

Make It
MIX all ingredients in saucepan.

BRING to boil on medium heat. Reduce heat to medium-low.

SIMMER 20 minutes or until heated through, stirring occasionally.

Skeleton with Brain Dip

Prep Time: 15 min Total Time: 15 min

Makes: 8 servings

What You Need!1/2 leaf lettuce leaf 1 cup KRAFT Ranch Dressing 4 cups assorted cut-up fresh vegetables (red and yellow bell pepper strips, cucumber slices, snow peas, mushroom slices, celery sticks, carrot sticks, cherry tomatoes, broccoli florets, cauliflower florets)

Make It!
LINE half of small bowl with lettuce for the skeleton's hair; fill with dressing. Place at one end of large tray or baking sheet for the skeleton's head.

ARRANGE vegetables on tray to resemble skeleton's body.

Prep Time: 20 min Total Time: 20 min

Makes: 8 servings What You Need!1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 1/2 cup packed brown sugar 1/2 tsp. vanilla 2 large apples, cut into quarters 1/4 cup PLANTERS Slivered Almonds

Make It!
BEAT cream cheese with mixer until creamy. Add sugar and vanilla; mix well.

CUT thin wedge in peel side of each apple piece; fill with 1 tsp. cream cheese mixture. Insert 4 to 6 nuts in cream cheese mixture in each apple to resemble teeth.

SPOON remaining cream cheese mixture into serving bowl. Serve with apples for dipping.
